Resolution

Serv-U does encrypt the connection and data during transmission of file(s). However the file(s) do not remain encrypted once uploaded to Serv-U and  saved to the server or a network folder, and the connection closed.
Serv-U does not have functionality to encrypt files while at rest.

If there is a Gateway server in the deployment, data will rest in the MFT server and not in the Gateway server.
As for the protection of communication channel between MFT and Gateway, since the Gateway is a reverse proxy, packets that are transferred between the MFT and Gateway servers are protected with the cipher suites of protocol used for communication with client application.
